Recipe: Basic Cream Soup - Lobster


Before you get the wrong idea, we found cheap lobster tails in the supermarket.  They were $5 per small tail - good enough for soups and maybe grill but for that, we'll need two each.

We found them at Kroger's.  You have to be a member to get the special 50% price.  Membership is free.  Then the other day, I heard that only certain folks shop at Kroger's - the not so well-off group.  I nearly fell out of my socks.  I thought that that reputation belonged to Walmart.  But I'm kidding. I haven't figured it all out - and I'm happy to remain blind that way.  As long as you've fresh food at a good price, and your shop is clean and neat, we're at your doorstep.

We have become quite spoilt by the "one-stop shop" concept of the megamarts here.  From fresh food to pharmacy to lottery to household utensils to automart to clothes, shoes, electronics cards and what not - everything is under one roof.  For a colleague who lived most, if not all, of her life in Midland (and she's in her 50's), and who moved to Hong Kong just before we came over, the thing she missed most was the convenience of these giant stores.  What floored her was she just didn't know where to buy cheap photo frames in Hong Kong to put up her family pictures the way she knew which aisle they were in at Meijer.   

Anyway, I digress.  So we have these lobster tails and I decided to make a lobster chowder for dinner.


Ingredients
2 cups of cooked lobster tail (or whatever amount you have)
2 potatoes, diced
1 onion, diced
1 garlic, crashed and chopped roughly
1 cup of mixed vegetables (frozen or fresh, whatever you have)
4 tablespoon of butter
4 tablespoon of all purpose flour
1 teaspoon of salt
Dashes of white pepper
1 cup of milk
1 cup of light cream (I skipped this and felt it still tasted great; just adjust the liquids in the recipe)
2 cups of stock or until you get the consistency you want

Method
1. BoilMelt butter in saucepan
2. Stir in flour and milk and mix well
3. Add in stock, bring to boil.
4. Add in potatoes, onion, garlic and mixed vegetables - get these cooked.
5. Season with salt and pepper, add in lobster tail, and let boil one more time before you serve.

To cook lobster tails:
1. Stick skewers into raw tails to keep them from curling up during cooking.
2. Boil a pot of water and seasoned with seaweed or salt or...I like to use bonito seasoning.  You can find the following in supermarkets in Midland and Singapore.
3. When water boils, drop in the tails.  
4. Let the water boil again and from here, cook for another five minutes.
5. Remove meat from shells, OR, at this stage, you can cut through lengthwise the top part of the tail, pop out the flesh, top with cheese and whatever and grill in a pre-heated over at 425F for 5 minutes or so or until the cheese melts, OR you can also serve it with melted butter.  Super shiok.
