Recipe: Baked Meatballs & Cauliflower Mash

I'm still sitting on my weight loss plateau.  Not moving up nor down, but maintaining my healthier eating lifestyle.  While there are treats, most meals are disciplined balanced options - like what I've prepared for lunch tomorrow.

We're having baked turkey meatballs and a cauliflower mash.  

Baked Turkey Meatballs
500g/1lb of lean ground turkey
1/2 cup of bread crumbs
1 egg

The above is the basic recipe for meatballs that I learned from NYT's recipes.  You can use any ground meat alone or in combination.  What comes below are options for you to improvise as you wish.

3 cloves of garlic, minced
1 medium yellow onion, diced finely
1 serrano pepper with insides removed and diced finely
1/2 tsp ground white pepper
1 tsp of salt

1. Heat oven to 425F.
2. Mix all of the ingredients above in a bowl.
3. Make 1 to 1.5 inch size meatballs.  The above should yield about 25 meatballs. 
4. Spray cooking oil on your baking tray.  Place meatballs on tray and popped into oven for 20-25mins.
5. Remove when done.  The meatballs might stick to the pan but gently unstick them with a spatula.

Cauliflower Mash
1 head of cauliflower
1 tablespoon of salt
1 tablespoon of butter
3 tablespoon of milk

1. Add half the salt to water and bring to a boil.
2. Add florets of cauliflower to hot water and boil for 20 mins.
3. Remove from hot water, strain, and mash it all up.  If you find that the mash is very watery, elevate on edge of the bowl you're mashing the cauliflower in to allow water to drain to the opposite edge and dap dry with a kitchen tissue towel.
4. Add in butter, milk and remainder of salt. Mix well and adjust seasoning to taste.


I've topped off my turkey meatball with a bit of pasta sauce to dress it a little.
